Lasagna Noodles

Recently, my husband and I decided to make our own lasagna noodles. Here is what we did:

2 1/2 cups flour
4 eggs
pinch of salt

Make a well in the center of the flour and add the eggs and salt. Work it together, bringing flour from the outside until a dough is formed. Knead it for a bit until it is smooth, and then let it rest for 20 minutes (covered with a towel).

Divide the dough into 6 pieces, and one at a time, run through the pasta machine (or roll out on countertop). After running the dough through the machine, fold it up in thirds and repeat, adding flour to the rollers if necessary. I like to run the dough through the machine on the largest setting 8-9 times before starting to decrease the size of the opening. This makes the dough nicer. Cut the strips to match the size of your pan if necessary.

Cook the noodles in boiling water for about 1 minute each. You can put 2 or 3 in the pot to cook at once. Fish the noodles out and let them drain. Use them to assemble your favourite recipe for lasagna. They were fun to do. I don’t think the flavour is a lot different than the dried noodles, but the texture was very nice.
