I love roasted cauliflower. If you have never tried it, it is simple to make. Just wash your cauliflower and cut it into bite size pieces. Drizzle with olive oil, sprinkle it with salt, and put in a 400 degree F. Roast for about 12 minutes, turn the pieces over, and roast another 12-15 minutes. The combination of the caramelized vegetable and salt is addictive. On the rare occasions we have any leftover, they are a coveted snack…even cold.
