Looks delicious. You’re so lucky you can get a side of beef. I’m not vegetarian, but I avoid beef unless the cows were pastured, and only a couple of places near me carry pastured beef.
Maybe it will become more popular in your area in the next few years. Grass-fed beef was never mentioned a few years ago here even though we are in the heart of ranching country, but demand for it has sky-rocketed so we can find it in a number of shops, as well as having the ability to buy directly from the producer.
