
This cake has good chocolate flavour as well as a surprisingly good texture in spite of there being no flour, sugar, nuts or fats in the cake. I like to serve it with some amarena cherries or a little ice cream.
- 2 cups pitted medjool dates (use soft ones)
- 6 Tbsp. cocoa powder
- 2 tsp. baking powder
- 3 eggs
- 1/4 tsp. salt
Using a food processor, reduce the dates to a soft paste. Add in the cocoa, baking powder and salt and briefly process. Add the eggs and pulse until the mixture is smooth and light (a minute or two). Pour into a greased pan. I used a 15 cm round pan. Bake at 350 F for 35 minutes, turn off heat and let sit in oven for 10 minutes so cake doesn’t fall. Remove from oven.
