I love the salty, garlicky crispness the crumb coating adds to the fresh asparagus. Give this one a whirl!
- 1 bunch of asparagus
- ¾ cup panko breadcrumbs
- ½ cup shredded parmesan cheese
- 4 tablespoons olive oil , half for mixing,half for drizzling
- 3 cloves minced garlic
- 1 teaspoon Italian Seasoning
- 1 teaspoon lemon juice
- salt and pepper
Directions
- Preheat oven to 400 F.
- On a cookie sheet, drizzle half the oil on the asparagus and season with salt and pepper.
- Add parmesan cheese, the other half of the olive oil, garlic, breadcrumbs, Italian seasoning and lemon juice to a bowl and mix.
- Dip the asparagus stalks in the breadcrumb mixture to coat them and return them to the cookie sheet. Add any leftover breadcrumbs to the top of the asparagus.
- Bake about 10 minutes until asparagus are tender.
