Parmesan Breaded Asparagus

I love the salty, garlicky crispness the crumb coating adds to the fresh asparagus. Give this one a whirl!

  • 1 bunch of asparagus
  • ¾ cup panko breadcrumbs 
  • ½ cup shredded parmesan cheese 
  • 4 tablespoons olive oil , half for mixing,half for drizzling  
  • 3 cloves minced garlic
  •  1 teaspoon Italian Seasoning
  • 1 teaspoon lemon juice 
  • salt and pepper

Directions

  • Preheat oven to 400 F.  
  • On a cookie sheet, drizzle half the oil on the asparagus and season with salt and pepper.   
  • Add parmesan cheese, the other half of the olive oil, garlic, breadcrumbs, Italian seasoning and lemon juice to a bowl and mix. 
  • Dip the asparagus stalks in the breadcrumb mixture to coat them and return them to the cookie sheet. Add any leftover breadcrumbs to the top of the asparagus. 
  • Bake about 10 minutes until asparagus are tender.
