This is a lovely fall dessert. You can use any type of pastry you want: short crust or puff, homemade or purchased. On top of that sits a layer of frangipane topped with plums and glazed with apricot jam. You can use any soft fruit to top this dessert (raspberries, peaches etc).
Preheat oven to 375 degrees F.
Use pastry shell of your choice.
1 1/2 Tbsp. butter
1/3 cup sugar
1 cup ground almonds
1/4 tsp. almond extract
1/4 tsp. salt
Mix all the above ingredients together and spread into pastry of your choice.
8 sliced plums, approximately
Bake for 30-40 minutes until pastry is golden.
3-4 Tbsp. apricot jam, melted, thin with 1-2 Tbsp. of water if necessary.
