I was very sad when Bernard Callebaut lost his chocolate empire in Calgary. His flagship store downtown was/is iconic, but is now run by other people. He has reinvented himself as Papa Chocolat with new styles and designs, and I wondered how this would be executed. He has a modest shop in Willow Park Village and is a vendor at two farmer’s markets. I made a little excursion and found myself unexpectedly cheered. He has embraced hipster fun and colour in place of high-end elegance, with new flavours and beautiful designs!
