Foil Pack Veggies

Since the weather has been warming up, we have been cooking more on the grill. You can also do these in the oven if grilling is not your thing. Cooking in foil packets it easy and it gives you a steamed/roasted/baked kind of heat depending on how long you cook things. We love this “all in” veggie dish. If you are cooking for more people than one packet would feed, my advise is to make more individual ones rather than trying to make one large, unwieldy package.

For one person:
1 medium potato, sliced
2 carrots, sliced
1/2 red onion, sliced
1 Tbsp. olive oil
seasoned salt to taste
pepper to taste

Lay your prepared vegetables on one side of a length of foil, drizzle oil over top and season. Fold the other side up and seal sides together with double folds. We keep our grill at about 400 degrees F with the lid closed and it takes about an hour to cook. Use a tray or baking sheet to bring them inside so you don’t tear the foil. Carefully open one end (there is a lot of steam inside) and pour onto a plate.
