Last week it was just me in the house so I was enjoying making simple meals. A friend of mine brought curried egg salad sandwiches to a potluck last week, and that seemed the perfect thing to make for myself. I think you could just add curry to most egg salad recipes, but in case that is not something you make, I included instructions.
4 hard boiled eggs
1/4 cup mayonnaise
2 tsp. mustard
1/2- 1 tsp. curry powder
Salt and pepper
1 stalk celery, chopped
Soft tortilla
Spinach or celery leaves
Mash up the eggs and add the mayo, mustard, curry, salt, pepper and celery. Place spinach or celery leaves down the middle of your tortilla, top with egg mixture and roll.
Sounds yummy, but I’d prefer it on good home-made white bread.
