All-in-Soup is a hamburger soup, full of veggies and barley. My roommate and I ate buckets of this delicious soup in university. Her mom would package it in bags perfectly portioned for two hungry students and we could just pull one out of the freezer for a simple, nutritious meal.
Brown:
1 lb. ground beef
1 cup minced onion
Add:
8 cups boiling water
40 oz. tomato juice
4 beef bouillon cubes
2 cups shredded raw carrot
1 cup shredded raw potato
1 cup finely chopped celery
1 cup frozen peas
3/4 cup pearl barley
2 tsp. salt
1 tsp. pepper
1 tsp. sugar
1 bay leaf
Combine everything (except the peas) in a big pot and simmer until the vegetables and barley are tender. Stir in frozen peas just before serving.
J > This – give or take a few tweaks – is what grew me from a wee baby into a 6ft 6in young adult. Always filling. Very tasty and good for you.
