I like a nice orange-flavoured cake. I like this one because it uses all parts of the orange in the cake, soaking syrup and glaze.
To make the cake:
3 cups flour
1 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
Mix the dry ingredients together and set aside.
3/4 cup buttermilk
1/4 cup orange juice
1 tsp. vanilla
Combine these wet ingredients together and set aside.
1 cup butter
2 cups sugar
5 eggs
zest of 2-3 large oranges
Cream the butter and sugar together. Add the eggs, one at a time, beating after each one. Stir in the zest. Add the half the dry ingredients, then half the wet, mixing after each. Repeat with the remaining dry and wet ingredients. Pour into greased bundt pan. Bake in a preheated 350 degree F oven for 45-55 minutes, or until top is dry and toothpick comes out cleanly. Let sit 10 minutes in the pan to cool. Turn out of pan onto cooling rack. Brush with soaking glaze, below.
Soaking glaze:
Reserve 3 tablespoons of juice from the oranges you zested. Measure the rest of the juice and add an equal amount of sugar. Stir well. Brush over hot cake until all is absorbed.
Cool cake entirely.
Glaze:
Combine 1 cup of icing sugar with 1-3 tablespoons of orange juice until you get a smooth glaze. Pour over the top of the cooled cake.
