Biscuit Cinnamon Rolls

When you want cinnamon buns but don’t have time to let dough rise, these baking powder biscuit rolls are the cat’s meow. They are also a nice snack on a hike.

3 cups of flour
4 tsp. baking powder
1/2 tsp. salt
3 Tbsp. cold butter
3/4- 1 cup of cold milk

PLUS: butter, brown sugar and cinnamon for rolling

Mix the dry ingredients together. Rub cold butter into the flour mixture. Add the milk, mixing only enough to combine. Pat out into a rectangle, spread with butter, brown sugar and cinnamon (I never measure the amounts of these, just a thin layer of butter and sugar and a sprinkling of cinnamon). Roll lengthwise. Cut slices and place in a greased 9×13 pyrex pan. Bake in a preheated 400 degree F oven for about 15 minutes, or until golden brown.
