Date Oatmeal Cookies

My grandma used to make these oatmeal cookies. You can add either chopped dates, chopped apricots or Thompson raisins, but the secret oomph is the orange extract.

3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
2 Tbsp. water
1 tsp. orange extract
2/3 cup flour
1/2 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
3 cups rolled oats
1 cup dates, chopped (it is also good with raisins)

Cream butter and sugar; beat in egg and water. Combine dry ingredients and add to wet. Drop by teaspoons on parchment (or greased baking sheet). Bake at 350F for 10-12 minutes.

They will still be a little bit puffy and soft when you take them out, so cool them on the pan for 5 minutes, then transfer to cooling racks. If you try to transfer them too soon, they will fall apart.
