This salad is based on a fish taco filling we had in Hawaii and makes a great side. (No fish, no taco). I like the mix of colours, crunchy cabbage, juicy mango and sweet and sour flavours.
1/2 purple cabbage, sliced thinly
1 mango, sliced
1/2 cup snap peas, sliced
1/4 red onion, finely chopped
1 Tbsp. oil
1 Tbsp. honey
lime juice and zest from half a lime
pinch of salt
Mix the dressing and add to the salad.
