My husband loves his potatoes and this is one of his favourite ways to prepare them. They are scented with lemon, crunchy on the outside and fluffy on the inside.
4 baking potatoes (bakers turn out fluffier than boiling potatoes)
juice of 1 lemon
1/2 cup olive oil
3 cloves garlic, minced
1 tsp. dried oregano
2 tsp. salt
pepper to taste
3 bay leaves
Cut potatoes in quarters. Preheat oven to 425 degrees. Combine ingredients in 9×13 pan. Turn potatoes to coat both sides. Cook 30 minutes. Turn and cook another 30 minutes, and then turn and cook the final 30.
I do this quite often, too, together with a chicken, it’s really the most delicious potatoes. I usually add some tomatos and tomatopaste with water, even better
