I am always looking for cookies that contain no chocolate, nuts, legumes, bananas, cinnamon or oatmeal so they are suitable for my younger kidlet. These pumpkin cookies have the texture of cake really, but they are shaped like cookies and taste good. If any of you have a favourite recipe meeting this criteria, drop me a line or a link and I will give it a go!
Cookies:
2 cups flour
1 tsp. baking powder
1 tsp. nutmeg
1 tsp. ginger
1/4 tsp. cloves
a pinch of salt
1 1/2 cups pureed pumpkin
3/4 cup brown sugar
3/4 cup white sugar
1 cup butter
1 egg
1 tsp. vanilla
Beat the sugars and butter together until fluffy. Add the egg, vanilla and pumpkin. Mix together the dry ingredients and add to the batter.
Drop by teaspoons onto a cookie sheet liked with parchment. Bake 15 minutes in an oven preheated to 350 degrees. Cool.
Icing:
1/2 cup cream cheese
1/4 cup butter
1 3/4 cup icing sugar
1 tsp. vanilla
Beat together until smooth. Spread on tops of cookies. Do not stack these to store them. I stored them in the fridge as it helps such a soft cookie keep firm.
