These cookies are nice with a cup of coffee.
1/2 cup butter
1 cup sugar
1 egg
1/4 cup Bailey’s Irish Cream
1/2 teaspoon vanilla
2 1/4 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
Soften the butter. In mixer bowl cream together the softened butter and sugar. Add egg, Bailey’s, and vanilla; beat well. Stir together the flour, baking powder, and salt. Add to creamed mixture and beat until blended. Divide dough in half. Cover and chill about 1 hour.
On lightly floured surface, roll each half of dough in 1/4-inch thickness for thick cookies. Cut into desired shapes with cookie cutters. Place cookies on ungreased cookie sheet. Bake think cookies in a 375 degree F oven for 10-12 minutes. Remove from cookie sheet; cool on wire rack. Ice with the following:
1/2 cup icing sugar
2 Tablespoons Bailey’s Irish Cream
Mix until well combined and spread over cooled cookies.
