This is a nice sauce for pasta that has a lot of taste and very few ingredients.
Cook the pasta as per the package instructions.
For the sauce:
1/2 cup cream
1/4 cup sundried tomatoes
1/2 cup boiling water
a handful of basil
1 onion, chopped
salt and pepper
parmesan cheese to garnish (optional)
Add the tomatoes to the boiling water and let sit until soft.
Sauté the onion. Add the water and tomatoes. Reduce the liquid by half. Turn down the heat and add the cream, basil, salt and pepper. Simmer until heated through. Toss with the pasta. Top with parmesan cheese.
