Double Ginger Cookies

These are my favourite ginger cookies. They use both ground ginger and minced candied ginger. Here is the recipe:

1/2 cup butter
1/2 cup sugar
1/2 cup molasses
1 egg
1 tsp. vanilla

2 cups flour
2 tsp. ground ginger
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/4 cup candied ginger (finely chopped)

coarse sugar (for decoration, I used raw cane sugar)

Cream butter and sugar. Add molasses, egg and vanilla and mix. Combine dry ingredients and add to the butter mixture. Form a 1-inch ball and roll in coarse sugar. Flatten with sugared glass. Bake at 350 F for 13-15 minutes until tops are crackled. This is a sticky dough. Do not add extra flour as it will make tough cookies.
