Day 4 of Baking Week
Amaretti are little Italian almond cookies perfect for dipping into coffee or hot chocolate. This was the first time we have made amaretti in our house, and we found them to be simple to make, and delicious to eat. No more buying packaged ones.
Preheat the oven to 350 degrees F.
In a food processor combine and roughly chop:
200 g of raw almonds
1 cup of sugar
1/4 cup of flour
2 egg whites
1 teaspoon of almond extract
Process until combined.
Form into balls on parchment paper. Flatten slightly with a sugar dipped glass. Bake for 13 minutes or until light brown.
