This granola is one of our favourite breakfast foods. My husband likes his by the bowl with milk. I like it as a topping for yogurt and fruit.
Here is how you make it:
6 cups rolled oats
1/3 cup ground flax seeds
1 ¼ cup slivered almonds
3/4 tsp. cinnamon
3 large egg whites
3/4 tsp. salt
3/4 cup maple syrup, honey or molasses
1/3 cup extra virgin olive oil
Preheat oven to 350 F. Whisk egg whites and salt until frothy. Whisk in the sweetener and olive oil. Add wet ingredients to oats, flax, cinnamon and nuts. Stir until evenly coated. Transfer mixture to two rimmed baking sheets and spread flat. Bake 15 minutes, then flip with a spatula, then cook another 10 minutes until golden. Cool on the pan.
