Joanne’s Cake

This recipe is called “Out of This World Dessert”, but at our house, it is called Joanne’s Cake, after our dear friend who shared the recipe with my daughter. You need to make this the day before you want to serve it. Think custard, whipped cream, angel food cake and hot caramel sauce. Is your mouth watering yet?

Ingredients:

  • 1 cup white sugar
  • 1 ½ cups milk
  • 3 well beaten egg yolks
  • 3 egg whites, beaten stiff
  • 1 envelope Knox gelatin
  • 1.5 cups whipping cream, divided
  • 1 angel food cake (store bought, or home made), torn into small pieces
  • ¼ cup butter
  • 1 cup brown sugar

CUSTARD AND ASSEMBLY:

*Dissolve one envelope Knox gelatin in ½ cup cold water

For custard combine:

  • 1 cup white sugar
  • 1 ½ cup milk
  • 3 well-beaten egg yolks        

    Bring to boil.  Add dissolved gelatin and stir until dissolved.  This makes a thin custard to set the custard around the cake pieces.

    *Remove from heat, cool and refrigerate.

    • Line 9×13 pan with torn bits of angel food cake
    •  Whip 1 cup of whipping cream
    • In another bowl beat 3 egg whites until stiff
    • Combine the two
    • Add mixture to cold custard
    • Pour mixture over layer of angel cake 
    • Add another layer of angel food and finally cover with custard sauce.
    • Refrigerate overnight

    Hot Caramel Sauce 

    • 1/4 cup butter
    • 1/2 cup whipping cream
    • 1 cup brown sugar

    Mix together well and bring to boil.  DO NOT OVERCOOK.

    Serve hot/warm over dessert slices.
