After months of trying to empty the freezer before we moved, my youngest and I did some batch cooking last week and tried several new recipes to refill the freezer.
We made roasted chicken broth, chicken/cheese pepper poppers, Dijon chicken and potatoes, Miner’s Pie, meatballs, and chicken/cabbage slow cooker bags. I have included either my recipes or the link to a new recipe that we tried. The Miner’s Pie from the D&D Cookbook “Heroes’ Feast” is not included. It is a book I borrowed and highly recommend!

Pepper Poppers Recipe
Perfect for appetizers or to eat with salad for lunches.
1 bag of mini peppers
Meat from one rotisserie chicken, chopped
1 block of cream cheese, softened
1 tsp. garlic powder
½ tsp. salt
Several good grind of black pepper
1 cup of grated cheddar cheese
Cut peppers in half and seed them. Mix chicken with cream cheese and seasonings. Fill peppers and sprinkle cheddar on top. Bake at 400 degrees for 15 minutes.
