This is my favourite Christmas tea. I buy several boxes when it comes out in November so it lasts me through the winter. It also makes a nicely flavoured custard!
1 cup milk
1 cup cream
2 eggs
2 egg yolks
1/2 cup sugar
1 1/2 tsp. vanilla
4 Christmas tea bags
Preheat the oven to 300 degrees F. Heat the milk and cream in a saucepan with the tea bags over medium heat until hot, but not boiling. Let steep 5 minutes. In a bowl, combine the eggs, yolks, sugar and vanilla and whisk until well combined. Add a small amount of the milk/cream to this, stirring as you do. Slowly pour over the hot milk, whisking to combine. Pour the mixture through a strainer into 6 greased ramekins. Place the ramekins in a baking dish and fill the dish with water until it comes half way up the sides of the ramekins. Bake for 35-40 minutes or until just set.
