Banana Raspberry Chocolate Chip Muffins

This recipe was born of having only 1 overripe banana – not enough to make banana bread. Normally, I would have peeled and frozen it until it had companions, but I wanted muffins and had a few nice raspberries left. Both of these ingredients pleaded to have Chocolate Chips join them, so here we go. I used my Saskatoon muffin recipe and did some swapping. They are now one of my favourite muffins!

Mix together:
1 3/4 cups flour
1 Tbsp. baking powder
1/2 tsp. salt

Cream:
1/4 cup butter
1/2 cup sugar
1 egg
1 tsp. vanilla
3/4 cup milk

1 cup fresh raspberries
1 ripe banana, mashed
1/2 cup chocolate chips

Cream the butter and sugar. Add the egg and vanilla. Add the mashed banana. Add the dry ingredients alternately with the milk. Stir in the chocolate chips, and lastly, fold in the raspberries. Fill greased muffin cups 3/4 of the way and bake at 400C for 20 minutes.
