These are a pretty treat for someone special on Valentine’s Day, or something yummy on any day. The cake is moist but doesn’t contain any eggs or dairy. I also use this recipe for a 9×9 cake with a brown sugar, butter and coconut icing.
Chocolate Cupcakes
1 1/2 cups sifted flour
3 Tbsp. cocoa
1 tsp. baking soda
1 cup sugar
1/2 tsp. salt
5 Tbsp. oil
1 Tbsp. vinegar
1 tsp. vanilla
1 cup cold water
Sift dry ingredients together. Combine water, oil, vinegar and vanilla and mix into the dry ingredients. Spoon into cupcake liners and bake for 20 minutes at 350F.
1/2 cup butter
2 cups powdered sugar
1/2 teaspoon vanilla
2 Tablespoons whipping cream
Beat butter until smooth. Add powdered sugar, vanilla and cream. Mix until smooth and creamy. Add more cream if necessary to make a consistency good for piping. Add paste food colouring if desired. I chose a soft peach colour. Use a Wilton 2D tip and piping bag to swirl the icing onto the cupcake in a rose pattern. Start at the centre and work your way to the outer rim.
So beautiful!! Ahh… I wish I can make that rose… I can make cupcake but I always fail on decoration part…

Having the right icing tools makes the difference. Once you have them, it is just a swirl.
