Scalloped Potatoes are the ultimate comfort food for me. Add some cheese and I’ll do a happy dance. Perfect for cozy winter nights and holiday celebrations alike.
Preheat oven to 350 degrees F. Grease a 9×13 pan.
12 medium red potatoes, peel and slice thinly (I use my mandolin)
1/2 cup onion, grated
1 1/2 cups cheddar cheese (I like to use old cheddar)
Let the sliced potatoes sit in cold water for 10 minutes to remove some starch. Drain. Add cheese and onion, stirring to combine. Pour into greased pan.
1/4 cup butter
1/4 cup flour
2 tsp. salt
1 tsp. pepper
2 1/2 cups milk
In the microwave, melt the butter. Stir in the flour and seasonings until smooth. Add the milk and microwave for a couple minutes. Stir, and microwave another couple minutes until mixture bubbles and begins to thicken. (I used to do this on the stove, as for a white sauce, and you can, but this is quick and gives good results). Pour over potatoes. If it doesn’t just cover them, add a bit more milk.
Bake for an hour covered, and another hour uncovered so it can brown nicely.
