This is an easy way to change up mashed potatoes. Boil and drain them as usual, but when you get to the mashing stage, add less butter and milk, and add 1/2 a package of Boursin cheese per 4 people. I used chive and shallot this time, which was really good, and I have also enjoyed the garlic one. It goes well with roast chicken, ham or whatever you are having with your potatoes. Small effort, large flavour on your fork. Woo!
