Bacon Jam

Bacon “Jam” is my favourite condiment for burgers, hot dogs, and tomato/cheese sandwiches. Oh yes, it sounds strange, but it is really a sort of bacon chutney that adds the smoky taste of bacon to some onion/vinegar tang. Yum, oh yum.

Bacon Jam
1 lb bacon
1 onion, chopped
5 garlic cloves, chopped
1/8 cup packed brown sugar
1/2 cup strong coffee
1/4 cup maple syrup
1 Tbsp balsamic vinegar
1 Tbsp grainy mustard

Roughly chop the bacon and cook it in a heavy pot until it is done. Transfer it to a plate using a slotted spoon, to drain the fat off. Remove most of the bacon fat from the pot, leaving enough to sauté the onion and garlic cloves for 5 minutes, until soft and starting to turn golden. Return the bacon to the pan, adding the brown sugar, coffee, maple syrup, vinegar, and mustard and cook over medium heat for 15-20 minutes, or until a deep colour forms and the mixture thickens to the consistency of jam. Serve warm or cold.
