Jam-Filled Muffins

These are our favourite muffin treats. I started making this recipe years ago while I lived in university residence, and it has continued to be my favourite through the years. Here is the recipe:

Jam-Filled Muffins

1 3/4 cups flour
1 ½ tsp. baking powder
½ tsp. salt
½ tsp. ground nutmeg
¼ tsp. cinnamon
¾ cup sugar
1/3 cup oil
1 egg
¾ cup milk
(strawberry jam for filling)

Lightly grease 12 muffin tins; set aside. Stir together the dry ingredients. In another bowl, cream together sugar, oil and egg. Add flour mixture and milk alternately to creamed mixture, stirring after each addition. Cover the bottoms of the muffin tins with batter; add 1-2 tsp. of strawberry jam on top of the batter in the cups. Cover jam with another dollop of batter. Bake in oven at 350 degree Fahrenheit for 20 minutes.

Topping:
5 Tbsp. melted butter
1 tsp. ground cinnamon + 1/3 cup sugar mixed together

While muffins are still warm, dip in the melted butter and then in the cinnamon and sugar mixture.
