Red Cabbage

This is a Danish style cabbage recipe we especially enjoy in cold weather.

  • 1 head of red cabbage, quartered, cored and thinly sliced
  • 4 Tablespoons butter
  • 1 Tablespoon sugar
  • 1 tsp. salt
  • 2/3 cup water
  • 1/3 cup white vinegar
  • 1 apple, peeled, cored and grated (reserve)
  • 1/4 cup current or crabapple jelly (reserve)

In a large pot, bring the butter, sugar, salt, water and vinegar to a boil. Add cabbage and mix through. Reduce heat to medium low. Cover and simmer for an hour. Remove the lid, stir and cook another hour with the lid off. Add the apple and jelly. Stir through and cook a further 10 minutes.
