This seasonal jam is such a lovely accompaniment to a holiday breakfast or a snack of toasted panettone, butter and jam! It is less bitter than marmalade because it uses only the zest and flesh of the oranges rather than the entire peel. I process this jam in a hot water bath if I am giving it as a gift in case they save it for later use, but our own portion is just kept in the fridge because is eaten long before it has a chance to get old!
