I tweaked my daughter’s guacamole recipe to make this simple salad dressing, which is also a great way to use up an avocado that has gotten a bit too ripe. It is creamy, but doesn’t contain dairy, which is a useful thing to have in a recipe box, given all the food restrictions folks have these days. I didn’t have fresh garlic or a lime, so I used pantry staples to make it this time. Still tasty, but fresh lime is better if you have it.
1 T olive oil
3 T lime juice
1 T water (if needed to thin the dressing)
1 avocado
1 tsp minced garlic
salt and pepper
Handful of herbs (basil, dill or parsley)
Optional- a squirt of sriracha
Blend until smooth. This makes enough for a large salad.
