I always like to try new things, or different combinations of known things. I promised a friend a pie and I wanted to make something different than the usual apple or cherry. Knowing he likes chocolate and peanut butter I thought I would try to combine a few things reminiscent of Reese’s Peanut Butter Cups and Smores. This is what I came up with: graham crust with thin layer of chocolate ganache and a topping of peanut butter cream. Of course, I had to make a test tart to make sure it was up to snuff. Crust:
1 1/4 cup graham crumbs
1/4 cup butter, melted
1 Tbsp. sugar
Mix together and press into pie plate.
Chocolate Ganache (from my Mother of All Chocolate posts)
1/2 cup whipping cream
2 Tbsp. light corn syrup
6 ounces semisweet chocolate, shaved or chopped in small pieces
Bring cream and corn syrup to simmer in a heavy pan. (do not boil). Remove from heat. Add chocolate and stir until melted and smooth. Cool slightly and then pour into the pie crust and smooth until level.
Peanut Butter Cream:
1/2 cup whipping cream
1 Tbsp. sugar
1 tsp. vanilla
Beat the above until peaks form. Set aside.
1/2 cup peanut butter
1/2 cup whipping cream
2 Tbsp. sugar
pinch of salt
Beat together the above until smooth. Fold in the whipped cream that was set aside. Spread over top of the pie. Chill.
