Lazy Daisy Cake

This is a vary moist version of a popular cake from the 1940’s that my grandma used to make.  It is one of my favourite cakes, so my younger daughter often makes it for my birthday.


Lazy Daisy Cake

1/3 cup butter
1 1/2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoon baking powder
1/2 salt
3/4 cup milk
1 egg
1 1/2 teaspoon vanilla

Grease and lightly flour a 9x9x2-inch baking pan; set aside. Place butter in small mixing bowl. Add flour, sugar, baking powder, and salt. Add half the milk, the egg, and vanilla. Mix at low speed of electric mixer until blended. Beat 2 minutes at medium speed. Scrape sides of bowl. Beat in remaining milk. Beat 2 minutes more at medium speed. Turn into prepared pan. Bake at 375F oven for 25-30 minutes or until wooden pick inserted in center comes out clean. (Over-baking will dry out this cake). Cool on wire rack while you prepare the topping.

Broiled Coconut Topping

1/2 cup packed brown sugar
1/4 cup butter, softened
2 Tbsp. milk
1 cup coconut

Cream brown sugar and butter until fluffy. Stir in milk. Stir in coconut; spread over warm cake in pan. Broil 4 to 5 inches from heat about 3 minutes or until golden. Serve warm.


    1. It is birthday month in our household- three of them! We have to finish one cake before it is time to bake the next! Not that eating cake is a hardship 😉. I have not heard of an oatmeal Lazy Daisy before. Do you just substitute some oats for some flour?
