Day 7, Baking Week
It is the last day of baking week here at Everyday Cheer, so I thought I would go to an old standby. I have been making biscuits since I was nine or ten years old. My grandmother taught me to make them, and they became the first thing I could bake from memory. They go nicely with stew or soup. I vary the flavours at times by adding things, like in this cheddar and chive version.
Here is the basic recipe:
2 cups of flour
4 tsp. baking powder
1/2 tsp. salt
3 Tbsp. cold butter
3/4- 1 cup of cold milk
Additions:
1 cup of grated cheddar
2 Tbsp. chives, cut into tiny pieces
2-3 Tbsp. butter for pan
Mix the dry ingredients together. Rub cold butter into the flour mixture. Add the chives and cheese. Add the milk, mixing only enough to combine. Pat out into a round and cut out biscuit (I use a glass). Melt butter in a 9×13 pyrex pan. Dip one side of the biscuit in the butter and then flip, so both sides get some. Bake in a preheated 425 degree F oven for about 15 minutes, or until golden brown.
