Cinnamon/Vanilla Pecans

These are tasty munchies to put out when you need a little something to see you through till dinner, or to give as a gift. You can taste both the cinnamon and the vanilla which gives them a unique flavour.

  • 1 lb pecans
  • 1 cup sugar
  • 1 Tbsp. ground cinnamon
  • 1/4 tsp. salt
  • 2 tsp. vanilla
  • 2 tsp. water
  • 1 egg white

Preheat oven to 250 degrees Fahrenheit

Beat egg until frothy, then add water and vanilla

Combine sugar, cinnamon and salt. Add to the egg mixture.

Toss the nuts in the mixture and lay in a single layer on a parchment covered cookie sheet.

Bake for 50-60 minutes, stirring every 15 minutes. They are done when you can see the sugar is crystalized on the nuts. Do not overbake.
