Crusted Chicken on Tomato, Onion and Garlic

I have been experimenting with different chicken dishes, and this one is my favourite so far. It has a nice mix of textures and flavours, using things I always have on hand.

4 chicken breasts

1 large onion, chopped

4 cloves garlic, diced

1 cup panko

3 Tbsp. chopped parsley

2-3 Tbsp. olive oil

3 tomatoes, diced

Sauté the onions until soft. Add garlic and cook for a couple minutes, then add diced tomatoes. Cook 5 minutes until melding together. Spread across the bottom of a baking pan and add the chicken on top. Top chicken with crumb mixture and press down to make a crust. Bake at 425F. for about 25 minutes or until the internal temperature of the chicken is 165 degrees F.
