All of this being isolated has sparked my urge to bake again. I made Apple Scones for our Sunday tea treat. Easy stuff. If you don’t have coarse sugar to sprinkle over the top, just use regular white sugar.
2 3/4 cups flour
1/3 cup sugar
1 Tbsp. baking powder
1 tsp. cinnamon
1/2 tsp salt
3 eggs
1/2 cup milk
1 tsp. vanilla
1 apple, chopped
coarse sugar to sprinkle over top
Mix the dry ingredients together. Beat the eggs with a fork and add vanilla and milk. Stir the wet ingredients into the flour mixture and add the apples.
Form a large (about 9″) circle on a parchment-covered cookie sheet, flattening to about 3/4 of an inch thick. Sprinkle coarse sugar over the top. Cut into 8 triangles and pull them slightly apart to help them bake nicely.
Put scones in fridge while you preheat the oven to 425 degrees. Bake in oven for about 18-20 minutes.
D > You like them sweet! I haven’t tried apple in scones before, perhaps I’ll try that recipe with our own apples, this year.

Sometimes I make the simpler ones and top them with jam and Devon cream, but these apple ones are good with just butter. Right now, I’m trying to use what we have in the house so we don’t have to go for groceries. Alas, no cream. How do you enjoy your scones?

D > Butter, always. Then, depending on ingredients, cream cheese, Stilton, or gooseberry (or quince) jelly.
