This is a soup I made recently that turned out to be very flavourful. We had a lot of cooked carrots that I was trying to put to use, but you could use raw ones and just cook the soup longer. Also, the vegetable amounts are estimates, roughly twice as many carrots as peas. I didn’t add any seasoning, as the sausages lend their seasoning to the whole dish.
1 package mild Italian sausage, removed from casings and cooked
4 cups of cooked carrots
2 cups frozen peas
2 litres of chicken stock
796ml can of diced tomatoes
Put it all in a slow cooker on low, or in a pot on the stove and just heat through.
